Description

A single-bevel knife for paring leather to a feather at the turn-in and along the joint. The English pattern is ground with the bevel on one face only, so the blade tracks flat against the stone and the leather rather than diving, which is what separates a controlled paring cut from a gouge. Carbon steel is used deliberately: it takes a keener edge than stainless and it can be brought back on a strop between operations without leaving the bench. It will patinate, and it will rust if put away wet. Supplied sharp but not finished — every binder settles the final edge to their own angle, and the first job with a new knife is to put your own bevel on it. Specify the grind for the hand you pare with; a right-hand grind used left-handed will not track.
