Paste Cooking Set — Pan, Muslin, Jar

Description

A dedicated set for cooking and storing starch paste: a heavy-base stainless pan sized for a working batch, a wooden spatula, a metre of muslin for straining and a wide-mouth screw-top jar for refrigeration. Dedicated is the operative word — paste cooked in a pan that has had anything else in it picks up contamination that ends up in a repair, and there is no way to find out except later. The heavy base is there because starch scorches on a thin one and a scorched batch is a wasted afternoon and a discoloured paste. The jar is wide-mouth so cooked paste can be spooned out and the jar washed properly rather than rinsed. Everything in the set is dishwasher-safe except the spatula, which wants washing by hand and drying standing up.
